Hi friends! Today, I’m linking up with some other bloggers for Tuesday Talk.  This is basically a write about whatever you want post and get some feedback from you too.

So my post for today is super unoriginal for this time of year…wait for it…Healthy Eating….#wompwomp

I have been eating pretty low carb since August.  I’ve got some great recipe ideas that I’ll share with you today, but would love some ideas from you too!  I get bored very quickly with grilled chicken and vegetables and would love to get more variety in our meals.

This Broccoli Salad is one of our favorites.  It goes great with any protein or it’s the perfect lunch.

Ingredients:

8 cups broccoli cut into bite sized pieces

1/3 cup red onion diced

1/2 cup dried cranberries

1/4 cup sunflower seeds

1/2 cup bacon bits

3 tablespoons cider vinegar

2 tablespoons sugar (I use splenda)

1 cup mayonnaise

salt & pepper to taste

Whisk together cider vinegar, sugar, mayonnaise, salt and pepper in a medium bowl. Set aside.

In a large bowl, combine broccoli, onion, cranberries, sunflower seeds, and bacon bits. Pour the prepared dressing over and mix well.

Refrigerate for an hour before serving.

Spaghetti Squash is another favorite of ours.

To bake, you just cut the squash in half.  Drizzle olive oil over each half and sprinkle some salt and pepper on it.  Turn each side face down on a baking sheet and bake at 400F for about 45min.

This squash makes a lot and only Mark and I eat it.  I make regular pasta for the kids.  So,  the first night we’ll have it with meatballs and the second night, Mark makes amazing shrimp and scallops that we eat it with.

This is my low carb meatball recipe:

1lb. ground beef

1/2 lb. ground sausage

2 Tbl fresh parsley, chopped

3/4 cup grated parmesan cheese

1/2 cup almond flour

2 eggs

1 tsp kosher salt

 1 tsp dried onion powder

1/4 tsp ground black pepper

1/4 tsp garlic powder

1/4 tsp dried oregano

1/2 cup warm water

Combine all of the meatball ingredients in a large bowl, mix well and form into  2″ meatballs.

Bake at 425 for 12-15 min

In our usual rotation is:  Taco salad, Cheeseburgers (bunless) with mashed cauliflower, brats with roasted vegetables, korean beef with cauliflower rice, shredded pork, grilled chicken, salmon, etc.
